"Gumbo," is an old southern recipe that has been passed down for years. A classic of Cajun cooking, Gumbo is the name given to any thick soup or stew from Southern Louisiana, prepared with a dark brown roux (a mixture of flour and fat), and thickened with okra or file` powder. File` powder is made from the ground of dried leaves from the sassafras tree. There are several different recipes for Gumbo; Seafood Gumbo, which usually has crab legs, shrimp, and oysters, and maybe a few vegetables; Chicken Gumbo, which has chicken and vegetables; also a Duck Gumbo, which contains duck, sausage and vegetables.
